Creamy Tahini Kale Salad

RAW . VEGAN . VIDEO


Mouthwatering raw kale salad, marinated in a creamy sesame dressing. This is fantastic as a lunch, dinner or side plate! I show you how in this easy video tutorial.


Raw kale doesn't sound very appealing to most people, yet it's one of the best greens you can include in your diet. And when prepared with a delicious dressing, it completely transforms into something amazing.


I heard recently from raw chef, Russell James, that lightly steaming kale for 2 minutes (no more) makes it even more nutritious, so if you want to do that before you prepare this salad go ahead! The rest is just the same.

INGREDIENTS


1 bunch Curley Kale

1 Courgette / Zuchinni

1 Carrot

1 bunch Broccoli, chopped into small florets

1 Celery stick, chopped

1 Apple, chopped

1/4 cup Raisins

2 tbsp Sesame Seeds

Juice of 1 Lemon

Fine Sea Salt or Himalayan Salt

Extra Virgin Olive Oil


Tahini Dressing:

1/2 cup Water

1/4 cup EV Olive Oil

1/2 cup light or raw Tahini

Juice of 1 Lemon

1 tsp Ground Cumin

1/4 tsp Sea Salt

1/4 tsp Smoked Paprika

1 tbsp Tamari

1 clove Garlic


METHOD:


1. Prepare the kale in a salad bowl by tearing into bite size pieces and removing any hard stems.


2. Add a good glug of olive oil, the juice one lemon and a good pinch of fine salt. Use your hands to massage this into the kale to soften the leaves. You want enough to lightly cover the leaves but not drown it in oil. Set aside to marinate.


3. Prepare the rest of veggies by peeling the courgette and carrot. Then peel off long strips of the courgette and the carrot and add this to the bowl. Discard the seeded middle of the courgette - but this can be used in smoothies, juices or soups!


4. Also add in the broccoli florets, the chopped celery and raisins.


5. Prepare the tahini dressing by blending all the dressing ingredients together until it's really creamy. Taste and add further seasoning if you prefer. If it's sticking in your blender add in a little more water.


6. Chop the apple and add this to the kale salad with the sesame seeds.


7. Pour the dressing over the salad and toss everything together so the veggies are well coated.


NOTES


This will keep covered in the fridge for a couple of days and softens even more over time.
