Berry & Coconut Yoghurt Bowl

RAW FUSION . VEGAN


More luscious than a plain fruit salad, these gorgeous berry bowls are perfect for breakfast or dessert when you want something quick and fruity!


You can use any fruits you have for this dish. It's especially lovely with mango and orange segments, blending some of the mango to make the coulis.


I suggest you serve these in glass dessert bowls or small tumbler glasses so you can see the beautiful layering effect. I sometimes use recycled jars which are also really pretty.



INGREDIENTS


Serves 2


1.5 cups unsweetened Coconut Yoghurt

1 cup fresh Raspberries

Handful Pomegranate Seeds

Handful Blueberries

Fresh Strawberries

1-2 tbsp Maple Syrup


Suggested garnish: grated dark chocolate


METHOD


1. Using a fork, mash half of the raspberries in a bowl, sweetening to taste with the maple syrup to make a coulis.


2. Pop a couple of spoonfuls of the raspberry coulis into the bottom of 2 small glass serving bowls, then spoon some of the yoghurt on top. Repeat the layering until all the coulis and yoghurt is used up, making sure you have a little coulis left for the top layer.


3. Top this with the rest of the fruit and grate over some dark chocolate if you want some extra decadence!


NOTES


You can prepare this a few hours ahead of time, and even the night before if it's for breakfast. What a nice thing to wake up to on a Sunday morning!
