Raw Blackberry Chia Jam


RAW . VEGAN . GLUTEN-FREE


This is a super quick and easy no-cook jam that doesn't need processed sugar to taste amazing! Perfect to stir into yoghurt, porridge, on toast, scones or pancakes.


INGREDIENTS


1.5 cups of fresh Blackberries (I also added in some Blueberries, and you can use any combo of your faves)

6 soft pitted Medjool Dates (pre-soaked in warm water for 60 mins and drained)

A squeeze of Lemon Juice

1 tbsp Chia Seeds

Optional: 1 tbsp Maple syrup (or other natural syrup of your choice, eg date, yakon)


METHOD


1. Use a food processor or blender to process all the ingredients, except the chia seeds, together until you reach a thick, slightly chunky consistency. Don't over blend, you want to keep some jam-like texture.


2. Taste to make sure it's sweet enough. This will depend on what fruits you are using, so you can add syrup if you wish.


3. Pour the jam into a bowl and add the chia seeds, stirring several times until they are well incorporated. As they seeds gelatinise, over several minutes, they will thicken the jam. If you've over processed or find your jam too runny, simply add more chia seeds if 1 tbsp doesn't thicken it enough.


4. Transfer this to a sealed glass jar and store in the fridge for up to one week.
